We’re cooking around the world, and each month we make a dish, learn about the country, and maybe, just maybe make a craft……..
This month we’re in Greece, and thanks to the VeggieTales: Saint Nicholas* , whenever I say that my kids all chant “Greece, Greece, Greece,” you’d get that if you’d seen it. I found two recipes that looked intriguing: wrap and meat pasta. Of course, in the end, I didn’t end up exactly cooking either one. I know big surprise.

Make your own gyro
Ingredients: chicken breasts (chopped up), garlic, olive oil, Greek spices, onions, tortillas or pita bread (pita bread is preferrable), feta cheese, spinach leaves, dill sauce
1. Grill the chicken with the able help of Batman, he was kid of the day. If you choose to have onions, also sauté them now. We added olive oil, garlic, and some Greek spices I had.
1a. Make the dill sauce: 1 cup of mayonnaise, 1 cup of sour cream, 2 tablespoons of dill weed, 1 teaspoon or so of garlic powder, a pinch of rosemary, I might have added other random spices that I had on hand…… I kinda made it up as I went basing it off something I’d had before. Mix together and refrigerate for 30 minutes.
2. Lay out your food. I had some leftover beef that I added in, if this was truly greek food there’d also be some goat or lamb. Having learned from experience my kids are not big fans of lamb I didn’t want to pay the extra expense of it. We already had our unusual ingredient in the dill sauce.

3. Make your pitas. For their first pita they had to try a little bit of the sauce. My kids are big fans of feta cheese, so they were limited to ONE spoonful only per wrap. Princess loved the sauce, and decided to use it as salad dressing the next day. The boys loved making their own wraps, so it was all good.
Ugh, for whatever reason between paragraphs my post keeps trying to go to bold….. This is annoying, and must be looked into.
4. Enjoy a nice informal meal and watch a movie about the first modern Olympics (hey I got geography, history, and a new recipe in all in one fell swoop).
It got three thumbs up, so I’d say it was a good meal.
